Healthy Breakfast Lunch & Dinner Bowls with The Domestic Geek! Collab – Mind Over Munch

►BREAKFAST: Carrot Cake Smoothie Bowl

1 cup carrot juice
2 bananas
1 cup pineapple, frozen
½ tsp cinnamon
½ tsp ground ginger

¼ cup chopped pecans
¼ cup pineapple, finely diced
¼ cup coconut chips
2-3 dates, pitted and chopped

In a blend combine carrot juice, banana, pineapple, vanilla extract, cinnamon and ginger. Blend until smooth. Pour into a bowl and top with pecans, pineapple, coconut chips and dates.

►LUNCH: Waldorf Salad Bowl

2 cups romaine lettuce, chopped
½ cup grapes, halved
½ apple, diced
¼ cup celery, chopped
¼ cup walnuts, chopped
1 boneless skinless chicken breast, cooked and sliced
2 tbsp blue cheese dressing

Toss romaine lettuce with one tablespoon of blue cheese dressing. Top with grapes, apple, celery, walnuts and cooked chicken. Drizzle with another tablespoon of dressing.

►DINNER: Fish Taco Bowl

1 cup wild rice, cooked
1 tilapia filet, cooked and flaked
½ cup mango salsa
½ cup red cabbage, shredded
½ cup black beans, rinsed and drained
½ avocado, sliced
1 lime, juiced
fresh cilantro

In a bowl top wild rice with mango salsa, red cabbage, black beans, avocado and tilapia. Dress with lime juice just before serving.

  31. Does anyone know the cal. and carb count, on these yummy looking food bowls?

  32. Pineapple in carrot cake? YES! I like raisins, too. And walnuts. Okay what to substitute for banana to help create that smoothie texture? For pecans I say pi-KONS. Waldorf Salad never had it because though the ingredients were fine, all dressed in just mayo kind of grossed me out. Not a plain mayo just mayo fan. But is a long famous salad with long history. (Just checked, 1893-96!) Now blue cheese dressing would be yummy on apples, grapes, celery and walnuts! Alyssia you have my share of chicken please. You may also have my share of cilantro and fish. 🙂 And about 3/4 of that amount of rice, well that would be too much for you so I'll just freeze that to use at a later time.
