I love using a full fat coconut milk to make my Chia Pudding transform into a rich and decadent, nutritious and delicious dessert or as a make ahead breakfast that takes just two minutes to put together. Chia seeds are nutrient dense and support health and weight loss.

CHOCOLATE CHIA PUDDING PIE
1/2 cup coconut milk (full fat)
1 tbsp. unsweetened cocoa powder
1 tbsp. maple syrup
1 tbsp. chia seeds

In a small mixing bowl or spouted glass cup, combine coconut milk, cocoa powder and maple syrup and mix until everything is incorporated. Gently stir in chia seeds and transfer to a wide mouth mason jar. Pop on the lid and refrigerate for a minimum of four hours. Serve with your favorite toppings and enjoy.

*optional toppings: Greek yogurt + graham crackers + raspberries

BANANA CHIA CREAM PIE PUDDING
1/2 cup coconut milk (full fat)
1/4 cup mashed banana (the browner the banana the better)
1 tbsp. maple syrup
1 tbsp. chia seeds

In a small mixing bowl or spouted glass cup, combine coconut milk, mashed banana and maple syrup, mix until everything is incorporated. Gently stir in chia seeds and transfer to a wide mouth mason jar. Pop on the lid and refrigerate for a minimum of four hours. Serve with your favorite toppings and enjoy.

*optional toppings: extra banana slices + a sprinkle of coca powder

COCONUT CREAM PIE CHIA PUDDING
1/2 cup coconut milk (full fat)
2 tbsp. shredded coconut (I like toasted)
1 tbsp. maple syrup
1 tbsp. chia seeds

In a small mixing bowl or spouted glass cup, combine coconut milk, shredded coconut and maple syrup, mix until everything is incorporated. Gently stir in chia seeds and transfer to a wide mouth mason jar. Pop on the lid and refrigerate for a minimum of four hours. Serve with your favorite toppings and enjoy.

*optional toppings: extra coconut + fresh blueberries

PUMPKIN PIE CHIA PUDDING
1/2 cup coconut milk (full fat)
1/4 cup pumpkin puree
1 tbsp. maple syrup
1 tbsp. chia seeds

In a small mixing bowl or spouted glass cup, combine coconut milk, pumpkin puree and maple syrup, mix until everything is incorporated. Gently stir in chia seeds and transfer to a wide mouth mason jar. Pop on the lid and refrigerate for a minimum of four hours. Serve with your favorite toppings and enjoy.

*optional toppings: Greek yogurt + cinnamon + granola

  3. I was wondering if the coconut pie one was healthy since we use a full fat milk, because I personally love to eat a sweet breakfast, but I still want it to be healthy. However, it looks soooooo appetizing! That's actually why I want to know if it's healthy, because I'm so attracted by it! Amazing video by the way! 🤗

  4. My favorite would probably be the pumpkin, then chocolate and then banana and then coconut.

  5. Tried (a variation of) the pumpkin and coconut cream chia puddings. Delicious, filling and satisfying! I added 1 tbsp dry goji berries (per serving) and found the flavours pairs well. The berries swell up in the milk and gives the pudding a little extra sweetness and flavour.  The red colour contrast is also a good presentation bonus. Meanwhile sweetener was omitted for the pumpkin pudding and was reduced by a quarter (4 services with 1 tbsp honey) in the coconut pudding.

I have tried the macha tea with banana that is awesome, I am looking forward to trying all the recipes you shared especially the pumpkin flavored one. pumpkin and coconut always taste great, it's my favorite ice cream flavor, i'm sure the chia pudding will be just as good.   25. I made YOUR "immunity boosting chocolate" added 1/2 pkg. of stevia and 1/2 tsp. of maple syrup. OOh la-la!!! A few granules of espresso? A li'l nutmeg? Going to try sweet potato and one chopped marshmallow. If I don't inhale it, I may try to toast the top. This recipe is a sweet tooth's life saver. Thank you soooooooo much!
